Avocado Toast w/ Pistachio Pesto and Grape Tomatoes Yield: 2 slices of pistachios toast

Time: 15 minutes


2 slices of Spelt toast

2 tablespoons Coconut oil

2 teaspoons Olive oil

1 whole Avocado

8-10 Grape tomatoes chopped in quarters

1/4 cup diced Red onion

Pistachio Pesto:

1/4 cup Pistachios

2 teaspoons Nutritional yeast

1/2 Lime squeezed

1/4 cup Fresh basil leaves

1 Teaspoon Pink salt

1 pinch Cheyenne pepper

1 teaspoon Onion powder

1/2 teaspoon Ginger powder

1 pinch Red pepper flakes

Directions: Use a mortar and pestle to grind pistachios, lime, and bay leaves. Add in salt, nutritional yeast, garlic powder, and ginger powder. Next, use a small bowl to mash avocado. Mix in remaining lime, a pinch of salt, onion powder, and black pepper. Use a toaster to toast bread. Spread coconut oil on toasted spread with a sprinkle of salt. Spread avocado mash evenly between both slices of bread. Last step is to add tomatoes, diced onion, and a drizzle of olive oil to each piece. Sprinkle a pinch of red pepper flakes to garnish.
